Wilted Cabbage and Bacon Salad

Start the new year with this delicious salad made with greens, bacon, corn and pomegranate seeds. These are all ingredients that many cultures believe bring good fortune and prosperity.

Makes 4 servings

Ingredients:

Honey Mustard Salad Dressing

  • 2 tablespoons Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey

Salad

  • 5 cups of chopped napa cabbage 
  • 4 strips bacon 
  • 1/2 cup frozen corn
  • 1/4 cup pomegranate seeds
  • Honey Mustard Salad Dressing

Directions: 

  1. Add the Honey Mustard Salad Dressing ingredients to a small microwaveable bowl.  Stir to completely blend. Set aside.
  2. Wash and chop the cabbage.  Drain in a colander, then place in a large bowl.
  3. In a large skillet cook bacon until crisp.  Remove bacon and drain on a paper towel.  Cut into pieces. Set aside.
  4. Discard most of the bacon fat, reserving one tablespoon of fat in the skillet.  Add corn and sauté for 2 to 3 minutes.  Set aside.
  5. Warm the Honey Mustard Salad Dressing in the microwave for about 1 minute or until warm.  Pour warm dressing over chopped cabbage.  Toss to coat.
  6. Add bacon and corn to wilted cabbage.  Toss lightly.   
  7. Sprinkle with pomegranate seeds.  Serve immediately.

Tips:

  • For variety, instead of only cabbage, mix up the greens you choose for the salad. Add lettuce, kale or a mixture of greens.
  • Garnish with microgreens for additional good fortune.
