Very Berry Muffins

Celebrate the 4th of July with these patriot muffins!

Makes about 12 muffins

Ingredients:

  • 2 cups all-purpose flour
  • ½ tsp. baking soda
  • 1 Tbsp. baking powder
  • ½ teaspoon salt
  • 1/3 cup sugar
  • ½ tsp. cinnamon
  • 2 large eggs
  • 1 cup buttermilk
  • ¼ cup butter, melted
  • ½ cup chopped strawberries
  • ½ cup blueberries

Directions:

  1. Preheat the oven to 375 degrees F.  Butter a 12-cup muffin pan.
  2. Stir flour, baking soda, baking powder, sugar and cinnamon together in a large bowl.  Make a well in the center.
  3. Beat egg with a fork in a small bowl.  Add milk and melted butter.  Pour liquid mixture into flour mixture; mix just until moistened. The batter will be lumpy.
  4. Fold in strawberries and blueberries.   Spoon batter into the prepared muffin pan, filling each cup 3/4 full.
  5. Bake in the preheated oven until tops spring back when lightly pressed, about 15 minutes.

Tip:  No Buttermilk?  Substitute 1 cup of milk with a tablespoon of lemon juice.
