Celebrate the 4th of July with these patriot muffins!
Makes about 12 muffins
Ingredients:
- 2 cups all-purpose flour
- ½ tsp. baking soda
- 1 Tbsp. baking powder
- ½ teaspoon salt
- 1/3 cup sugar
- ½ tsp. cinnamon
- 2 large eggs
- 1 cup buttermilk
- ¼ cup butter, melted
- ½ cup chopped strawberries
- ½ cup blueberries
Directions:
- Preheat the oven to 375 degrees F. Butter a 12-cup muffin pan.
- Stir flour, baking soda, baking powder, sugar and cinnamon together in a large bowl. Make a well in the center.
- Beat egg with a fork in a small bowl. Add milk and melted butter. Pour liquid mixture into flour mixture; mix just until moistened. The batter will be lumpy.
- Fold in strawberries and blueberries. Spoon batter into the prepared muffin pan, filling each cup 3/4 full.
- Bake in the preheated oven until tops spring back when lightly pressed, about 15 minutes.
Tip: No Buttermilk? Substitute 1 cup of milk with a tablespoon of lemon juice.
