Trick or Treat Pumpkin Pancakes

These pumpkin pancakes are nutritious and delicious. For a special treat around Halloween, add a few small candies atop the pancakes or serve the candies on the table and let everyone decorate their own pancakes.

Makes 12 3-inch pancakes

Ingredients:

  • 1 cup yogurt
  • 1/4 cup milk
  • ½ cup pumpkin puree
  • 1 egg, beaten
  • 1 tablespoon vegetable oil
  • 1 ¼ cups all-purpose flour
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Vegetable oil for cooking
  • Candy to decorate

Directions:

  1. Combine yogurt milk, pumpkin puree, egg, and oil together in a large bowl.
  2. Add flour, brown sugar, baking powder, cinnamon, and nutmeg together to the pumpkin mixture.  Stir until blended. 
  3. Heat a small amount of oil in large skillet to medium or medium-high heat.   Drop a large spoonful of batter into the skillet.   Cook until pancake slightly rises and falls, about 2 minutes. Flip and cook until lightly browned on the other side, about 1 minute more. Repeat with remaining batter.
  4. To serve, decorate with small candies.

Tip:

  • To test if oil is hot enough for cooking, sprinkle a drop of water in the oil.  If it spatters, the oil is hot enough.
