Strawberry Mixed Green Salad with Goat Cheese and Honey Walnuts

Makes 6 Servings

Ingredients

Salad

6 cups mixed greens (baby spinach and spring mix)

2 cups sliced strawberries 

1/3 cup crumbled goat cheese (or vegan cheese)

1/3 cup Honey Walnuts

Honey Balsamic Dressing 

Honey Walnuts

1-1/2 cup walnut pieces

1/4 cup honey

Honey Balsamic Dressing

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 Tbsp honey

2 tsp. Dijon mustard

½ tsp. Italian seasoning

Directions

  1. To make Honey Walnuts add ¼ cup honey and 1 ½ cup walnuts to a skillet.  Mix to coat walnuts.  Cook on medium heat for 5 minutes, stirring until there is no liquid in the pan.  Pour honey walnuts onto parchment paper to cool.    
  2. For Honey Balsamic Dressing:  Combine ¼ cup each balsamic vinegar and olive oil.  Stir in 2 Tbsp. honey, 2 tsp. mustard and ½ tsp Italian seasoning until thoroughly blended.  
  3. To make the salad, toss together mixed greens, strawberries, goat cheese and honey walnuts in a large bowl. Drizzle the honey balsamic dressing over top of the salad and toss to coat greens.  Serve.

Tip:  Sprinkle salad with 1 tbsp. chopped chives, if desired.
