Moo Shu Vegetable Pancakes

These Moo Shu Vegetable Pancakes filled with cabbage, carrots, mushrooms, onions and laced with ginger and hoisin sauce are a perfect Chinese New Year dinner.  Moo Shu is a Chinese stir fry served with thin Mandarin pancakes…think Asian tacos.

Makes 6-8 filled pancakes or tortillas

Ingredients:

  • 6-8 cremini mushrooms, thinly sliced (about 4 oz.)
  • 2 carrots, peeled and cut into matchsticks
  • 1/2 onion, thinly sliced
  • 3 cups shredded green or red cabbage or bok choy tightly packed (a mixture of 2 or 3 is more colorful)
  • 3 scallions, thinly sliced, divided
  • 1 teaspoon minced ginger
  • 3 tablespoons olive oil, divided
  •  4 eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1/2 cup hoisin sauce, divided
  • 6-8 Mandarin pancakes or wheat flour tortillas

Directions:

  1. Prepare your vegetables, ginger and eggs and gather all your ingredients.
  2. Heat a large skillet or wok to medium heat and add 1 tablespoon of olive oil.
  3. Add the beaten eggs to the pan and cover with a lid. Cook the eggs to almost set, then flip and cook the other side for 30 seconds or just until the eggs are fully set.
  4. Remove the eggs from the pan and slice into strips.  Set aside.
  5. Heat the large skillet or wok to high heat and add 2 tablespoons of olive oil.
  6. Add the mushrooms, carrots and onions and stir fry for 2-3 minutes.   Add the shredded cabbage, half the scallions and ginger.   Stir fry for another 2-3 minutes or until the veggies are bright in color and softened, but not over cooked.
  7. Sprinkle the vegetable mixture with garlic powder and add 3 tablespoons of hoisin sauce. Toss to coat and warm the sauce.
  8. Remove the skillet or wok from the heat.  Add egg strips and the remaining half of the scallions to the vegetable mixture.  Stir to combine.
  9. To serve, drizzle a line of hoisin sauce across the Mandarin pancake or wheat flour tortilla.   Fill each pancake or tortilla with about 1/3 to 1/2 cup of the stir fry vegetable egg mixture.  Roll or fold over and enjoy.

Tips:

  • It’s important to prep, measure, chop and gather ingredients on a platter or in small bowls before you start cooking.  Everything cooks in 5 to 6 minutes, so there is no time to chop or prep once you begin.
  • For another option, serve this moo shu vegetable stir fry over rice instead of with pancakes.
  • Omit the eggs to make this recipe vegan.
