These cheddar biscuits have a rich buttery-cheese flavor and a flaky texture. Serve for breakfast, lunch, or dinner.
Makes 8-9 biscuits
Ingredients:
- 2 cups all-purpose flour
- 1-1/2 tablespoons baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold (1 stick)
- 1 cup shredded medium cheddar cheese
- 3/4 cup whole milk
Directions:
- In a large mixing bowl, add the flour, baking powder, sugar and salt. Combine thoroughly.
- Dice butter into 1/2″ cubes. Add diced cold butter and cut it into the flour using a pastry blender until butter is pea sized.
- Add shredded cheddar cheese and combine thoroughly.
- Add milk and stir until mixture comes together and is mostly moistened. Do not over-mix. If some of the flour isn’t moist, then add an additional tablespoon of milk.
- In the bowl, pat the dough into a round disc. Fold in half and pat into disc and repeat 3 or 4 more times.
- Turn dough out onto a lightly floured surface. Pat the dough or roll with a rolling pin to about a 3/4 or 1-inch thickness. Dip a 2-1/2-inch round biscuit cutter into flour and cut out 7 biscuits. Put the scraps together, pat to the same thickness, and cut out an extra 1 or 2 biscuits.
- Place biscuits on an ungreased baking sheet 1-inch apart and bake at 425˚F for 12-15 minutes or until tops are golden brown and biscuits are baked through. Cool for 10 minutes and serve warm.
Tips:
- For a cheesier flavor, use sharp cheddar cheese.
