Easy Cheesy Biscuits

These cheddar biscuits have a rich buttery-cheese flavor and a flaky texture.  Serve for breakfast, lunch, or dinner.

Makes 8-9 biscuits

Ingredients:

  • 2 cups all-purpose flour
  • 1-1/2 tablespoons baking powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold (1 stick)
  • 1 cup shredded medium cheddar cheese
  • 3/4 cup whole milk

Directions:

  1. In a large mixing bowl, add the flour, baking powder, sugar and salt. Combine thoroughly. 
  2. Dice butter into 1/2″ cubes.   Add diced cold butter and cut it into the flour using a pastry blender until butter is pea sized. 
  3. Add shredded cheddar cheese and combine thoroughly.
  4. Add milk and stir until mixture comes together and is mostly moistened. Do not over-mix.  If some of the flour isn’t moist, then add an additional tablespoon of milk.
  5. In the bowl, pat the dough into a round disc.  Fold in half and pat into disc and repeat 3 or 4 more times.
  6. Turn dough out onto a lightly floured surface. Pat the dough or roll with a rolling pin to about a 3/4 or 1-inch thickness.  Dip a 2-1/2-inch round biscuit cutter into flour and cut out 7 biscuits. Put the scraps together, pat to the same thickness, and cut out an extra 1 or 2 biscuits. 
  7. Place biscuits on an ungreased baking sheet 1-inch apart and bake at 425˚F for 12-15 minutes or until tops are golden brown and biscuits are baked through. Cool for 10 minutes and serve warm.

Tips:

  • For a cheesier flavor, use sharp cheddar cheese.
