These pumpkin pancakes are nutritious and delicious. For a special treat around Halloween, add a few small candies atop the pancakes or serve the candies on the table and let everyone decorate their own pancakes.
Makes 12 3-inch pancakes
Ingredients:
- 1 cup yogurt
- 1/4 cup milk
- ½ cup pumpkin puree
- 1 egg, beaten
- 1 tablespoon vegetable oil
- 1 ¼ cups all-purpose flour
- ¼ cup brown sugar
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Vegetable oil for cooking
- Candy to decorate
Directions:
- Combine yogurt milk, pumpkin puree, egg, and oil together in a large bowl.
- Add flour, brown sugar, baking powder, cinnamon, and nutmeg together to the pumpkin mixture. Stir until blended.
- Heat a small amount of oil in large skillet to medium or medium-high heat. Drop a large spoonful of batter into the skillet. Cook until pancake slightly rises and falls, about 2 minutes. Flip and cook until lightly browned on the other side, about 1 minute more. Repeat with remaining batter.
- To serve, decorate with small candies.
Tip:
- To test if oil is hot enough for cooking, sprinkle a drop of water in the oil. If it spatters, the oil is hot enough.
