Braised Kale with Garlic & Mushrooms

Serves 5

Ingredients

¼ cup of grapeseed oil or avocado oil

1 bulb of garlic, peeled, chopped

8 oz. container of brown button mushrooms, stemmed, cleaned, thinly sliced

2 Tbsp. of S² Original Table Seasoning, Chef JL Michaels’ seasoning, divided

5 bunches of kale, stemmed, washed, chopped

2 ½ cups salt-free vegetable stock, divided

Sea salt to taste

Directions

  1. Add oil to large skillet. On medium heat sauté garlic until fragrant, around 45 seconds.
  2. Add mushrooms.  Increase heat to high, add a few pinches of salt and ½ Tbsp. of S2 Seasoning, stir. Cook 5 mins.
  3. Add half the kale.  Combine with mushroom mixture. Stir in 1 ½ cup of stock and remaining S2 Seasoning. 
  4. Reduce heat to medium. Simmer 5 mins. until kale is wilted.
  5. Add remaining kale and remaining cup of stock. Cover and simmer 10 mins. Remove lid, season to taste.
  6. Enjoy 🙂       

Tip:  Choose a variety of kale such as curly and dinosaur to add more flavor and texture.
