Great as a snack, appetizer or side dish. No peeling necessary! It has thin, edible skin and is extra delicious when served with Honey Mustard Mayo Dipping Sauce.
Makes 4 servings.
Ingredients:
- 2 delicata squash (about 1 lb. each)
- 2 Tbsp olive oil
- ½ tsp coarse salt
- Freshly ground black pepper (optional)
Instructions:
- Preheat oven to 425°F. Wash and scrub the outside of the squash. Cut ends off to create two flat edges. Cut in half lengthwise and scoop out seeds. (Use a grapefruit spoon for easy seed scraping.)
- Cut into 1/2-inch slices. Pour olive oil on a 11×15-inch baking sheet pan. Toss squash slices in olive oil and arrange in a single layer in the pan.
- Place in preheated oven and roast for 30 minutes. Flip each slice over and roast for another 10-15 minutes or until golden brown and crispy on the outside and tender on the inside. Sprinkle with coarse salt and pepper. Serve with Honey Mustard Mayo Dipping Sauce. (See Tip.)
Tips:
Honey Mustard Mayo Dipping Sauce: In a small bowl add 2 Tbsp. honey, 2 Tbsp Dijon mustard and ¼ cup mayonnaise. Mix until thoroughly combined. Serve.
How to Select a Delicata Squash: Choose one that is firm and heavy for its size with no soft spots. When ripe it is yellow with green striations on its rind. (Unripe delicata squashes are light green.)
