Fresh Dill Pickle Dip

Fresh Dill Pickle Dip is made with these quick and easy homemade pickles for a fresh pickle taste. Mix chopped pickles with yogurt, cottage cheese, shredded Cheddar cheese, fresh dill and seasonings.   Perfect for potlucks and BBQ’s.

Makes 2 cups of Fresh Dill Pickle Dip

Ingredients:

For the Quick Dill Pickles

  • 6 small pickling cucumbers, rinsed
  • 3/4 cup apple cider vinegar
  • 2 teaspoons salt
  • 2 tablespoons sugar
  • 2 tablespoons fresh chopped dill
  • 1 clove of garlic, minced

For the Dip

  • 1 cup plain whole milk yogurt or Greek yogurt
  • 1/2 cup 4% small curd cottage cheese, excess liquid removed
  • 1/2 cup shredded Cheddar cheese
  • 2 cups drained and chopped Quick Dill Pickles plus extra for garnish
  • 2 tablespoons pickle juice
  • 1 tablespoon fresh chopped dill
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Directions:

For the Quick Dill Pickles:

  1. Thinly slice 6 small pickling cucumbers to 1/4 -inch thick to yield 2-3 cups.  Set aside. 
  2. Add apple cider vinegar, salt, sugar, fresh chopped dill, and minced garlic to a mixing bowl.  Stir to combine.  Add sliced pickling cucumbers, stir to coat.  Cover and refrigerate for 2 hours or overnight for more flavor.

For the Dip:

  1. Add the yogurt, drained cottage cheese, and Cheddar cheese to a mixing bowl and stir to combine.  
  2. Add the remaining ingredients: drained and chopped pickles, pickle juice, dill, garlic powder, onion powder, salt and freshly ground black pepper. Stir to combine.  Refrigerate for an hour to let the flavors blend together.
  3. To serve, spoon the dip into a small serving bowl and garnish with pickles.  Serve with bagel chips, carrot sticks, celery sticks crackers, tortilla chips, or potato chips. 

Tips:

  • Dip Shortcut: Substitute with your favorite dill pickle chips or spears for the 2 cups of the homemade Quick Dill Pickles.
