Fresh Dill Pickle Dip is made with these quick and easy homemade pickles for a fresh pickle taste. Mix chopped pickles with yogurt, cottage cheese, shredded Cheddar cheese, fresh dill and seasonings. Perfect for potlucks and BBQ’s.
Makes 2 cups of Fresh Dill Pickle Dip
Ingredients:
For the Quick Dill Pickles
- 6 small pickling cucumbers, rinsed
- 3/4 cup apple cider vinegar
- 2 teaspoons salt
- 2 tablespoons sugar
- 2 tablespoons fresh chopped dill
- 1 clove of garlic, minced
For the Dip
- 1 cup plain whole milk yogurt or Greek yogurt
- 1/2 cup 4% small curd cottage cheese, excess liquid removed
- 1/2 cup shredded Cheddar cheese
- 2 cups drained and chopped Quick Dill Pickles plus extra for garnish
- 2 tablespoons pickle juice
- 1 tablespoon fresh chopped dill
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- Salt and freshly ground black pepper to taste
Directions:
For the Quick Dill Pickles:
- Thinly slice 6 small pickling cucumbers to 1/4 -inch thick to yield 2-3 cups. Set aside.
- Add apple cider vinegar, salt, sugar, fresh chopped dill, and minced garlic to a mixing bowl. Stir to combine. Add sliced pickling cucumbers, stir to coat. Cover and refrigerate for 2 hours or overnight for more flavor.
For the Dip:
- Add the yogurt, drained cottage cheese, and Cheddar cheese to a mixing bowl and stir to combine.
- Add the remaining ingredients: drained and chopped pickles, pickle juice, dill, garlic powder, onion powder, salt and freshly ground black pepper. Stir to combine. Refrigerate for an hour to let the flavors blend together.
- To serve, spoon the dip into a small serving bowl and garnish with pickles. Serve with bagel chips, carrot sticks, celery sticks crackers, tortilla chips, or potato chips.
Tips:
- Dip Shortcut: Substitute with your favorite dill pickle chips or spears for the 2 cups of the homemade Quick Dill Pickles.
