Fresh Peach Salsa

Fresh, ripe peaches flavor this easy to prepare “taste of summer” salsa.

Makes 6 servings

Ingredients:

  • 4 large peaches, peeled, pitted, chopped  
  • 1 red bell pepper, seeds and veins removed, chopped
  • 1/2 medium, sweet onion, chopped
  • 1 serrano or jalapeño, seeds and veins removed, finely chopped
  • 1/2 cup chopped cilantro
  • 2 Tbsp freshly squeezed orange juice
  • Salt and black pepper, to taste

Directions:

  1. In a large bowl, add the peaches, red pepper, onion, serrano, cilantro, and fresh orange  juice. Stir well.
  2. Cover with plastic wrap and store in refrigerator until ready to serve. Season with salt and pepper just before serving to prevent salt from drawing moisture from ingredients, making the salsa watery. 
  3. Serve with chips or grilled chicken, fish, pork or as a topping for tacos.  Makes about 1-1/2 cups salsa.

Tip:   Use freestone peaches with fruit that easily pulls away from the pit.
