Roasted Purple Asparagus with Honey Mustard Mayo

Purple asparagus is sweeter, mild, and nuttier in flavor than green asparagus.  It has a higher content of natural sugars than other asparagus varieties. It loses its purple color when cooked. Enjoy it raw, grilled, roasted, or steamed.

1 bunch purple asparagus spears

3 Tbsp. olive oil

Sea salt and ground black pepper to taste

1 tablespoon lemon juice (Optional)

½ cup mayonnaise

1 Tbsp. Dijon mustard

1 Tbsp. honey

  1. Preheat the oven to 425 degrees F.
  2. Wash asparagus and pat dry thoroughly. Cut off about 1-inch from base of the spear, discard.
