Watercress Salad

Ingredients

  • 1/4 cup chopped dried cranberries
  • 1/8 cup red wine vinegar
  • 1/8 cup balsamic vinegar
  • 1/2 tablespoon minced garlic
  • 1/2 teaspoons salt
  • 1/2 cup extra virgin olive oil
  • 3 bunches watercress – rinsed, dried and trimmed
  • 1 bulb fennel – trimmed, cored and thinly sliced
  • 1 small heads radicchio, cored and chopped
  • 1 cup pecan halves, toasted

Method

Combine first 6 ingredients in bowl.  In separate bowl, combine remaining ingredients and pour dressing over greens.
