Stinging Nettle Omelette
Serves 3-4
Ingredients:
1-1 1/2 cups stinging nettles
1 tbsp olive oil
1/2 medium onion
2 cloves of garlic – minced
5 eggs – scrambled
salt and pepper to taste
Directions:
In a pot, blanch stinging nettles in a pot of boiling saltwater for about 30 seconds and then rinse under cold water to dull nettles.
Remove large stems from nettles and roughly chop.
In a pan, saute garlic and onions with olive oil
Add nettles and saute for a few more minutes
Add eggs and cook until done
