Quinoa with Swiss Chard and Mushrooms

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 tbsp olive oil
  • 1 pound of Swiss chard, chopped
  • 12 oz. cremini mushrooms, sliced
  • 1 garlic clove, minced
  • Pinch of red pepper flakes (opitional)
  • Shaved Parmesan (optional)

Method

  1. Make quinoa by adding quinoa and water into a pot and bringing to a boil. Once boiling, lower heat to a simmer, cover and cook for 10-15 minutes.
  2. While quinoa is cooking, add 1 tsp of olive oil to a sauce pan with red pepper flakes and Swiss chard. Cook until wilted, 6-8 minutes.
  3. Remove Swiss chard and set aside. Add remaining olive oil to sauce pan, add garlic and mushrooms. Cook until mushrooms release water, about 3 minutes.
  4. Add Swiss chard and quinoa to pan and stir ingredients together to warm.
  5. Add Parmesan after serving
