Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 pound of Swiss chard, chopped
- 12 oz. cremini mushrooms, sliced
- 1 garlic clove, minced
- Pinch of red pepper flakes (opitional)
- Shaved Parmesan (optional)
Method
- Make quinoa by adding quinoa and water into a pot and bringing to a boil. Once boiling, lower heat to a simmer, cover and cook for 10-15 minutes.
- While quinoa is cooking, add 1 tsp of olive oil to a sauce pan with red pepper flakes and Swiss chard. Cook until wilted, 6-8 minutes.
- Remove Swiss chard and set aside. Add remaining olive oil to sauce pan, add garlic and mushrooms. Cook until mushrooms release water, about 3 minutes.
- Add Swiss chard and quinoa to pan and stir ingredients together to warm.
- Add Parmesan after serving
