Patty Pan Squash and Vegetable Roast

This is a great way to use the adorable, buttery, and delicious patty pan squash!

Ingredients

1/2 onion

1 red pepper

1 green pepper

1 broccoli head

1lb patty pan squash

2-3 tbsp olive oil

Salt and Pepper

 

Method

Preheat oven to 400˚F

Chop all vegetables to roughly the same size

In a bowl, toss vegetables with olive oil, salt and pepper

Roast on a foil-lined sheet pan for 35-40 minutes, stirring occasionally

 

*Another great way cook up these veggies is to skewer them and make veggie kebabs on the grill! It’s a fast, easy way to get a summery taste and keep the house a little cooler.
