market produce sandwich

All ingredients from Evanston Farmers Market:

Ingredients

10 grain bread-2 slices

1 bunch of greens:  swiss chard, kale, or spinach

2 tomato slices

fresh mozzarella

balsamic vinegar

fresh herbs of choice

Method

CHOP greens, rinse and put in small skillet with 2 T water.  Put lid on and steam gently for 5-10 minutes.  Place small slices of cheese on top and replace lid.  Cook for a few minutes until cheese begins to melt.  While greens cook, make toast.  Place greens and cheese on toast.  Top with sliced tomatoes and top with a bit of balsamic vinegar and fresh herbs.
