Blueberry Galette

Time to use those wonderful market fruits, and this simple galette is low in sugar, allowing the fruit’s own flavor to shine.

Roll out pastry dough (see below for recipe) and sprinkle 2 T. flour, leaving 1 inch rim flour-free. Then sprinkle 1-2 T of sugar. Place blueberries on top, sprinkle with another T of sugar. Grate lime or lemon or use a bit of cinnamon. Fold edge around circle to encase fruit and bake at 400 for 20 minutes.

Pastry dough: Blend 1 stick of butter with 1 1/4 cup of flour until mealy. This can be done in a food processor or by hand-Julia’s method!. Then, add 3 T. ice water and mix until smooth.  Roll into ball and refrigerate 2 hrs before use.
