Food Tip: Fermenting Vegetables At Home

We’ve been reading about the benefits of fermented vegetables.It turns out that they are pretty easy to do, and you can get root vegetables, cabbage, etc. at the Winter Market at the Evanston Ecology Center. The market runs from 9am to 1pm every Saturday from now until the summer market opens in May.

It is also a safe process.

The Germans have been benefiting from sauerkraut forever, as have the Koreans with kimchi.
